Ingredients
  1. One wheel or wedge of brie with rind
  2. 1-2tbsp olive oil
  3. 2-4 sprigs fresh rosemary
  4. 2-4 fresh sage leaves
  5. 1 clove garlic, thinly sliced
  6. Salt and pepper to taste
Instructions
  1. Carefully slice the rind from the top of the brie, set aside.
  2. Score cheese with a knife and wedge rosemary, sage, and garlic into slices.
  3. Drizzle olive oil over cheese and herbs and replace rind.
  4. Bake at 350°F for 20 minutes or until bubbly, then remove top rind and serve warm with baguettes or crackers.
Notes
  1. Use different base options or herbs and seasonings to obtain different flavors.
Cheese Substitutions
  1. Mozzarella (bake for the same amount of time)
  2. Cream cheese (reduce baking time by half)
Savory Base Options (to substitute for olive oil)
  1. Dry vermouth
  2. Brandy

  1. Honey
  2. Fruit juice
  3. Jam/jelly/preserves
  4. Maple syrup
  5. Softened butter

  1. 1/2c – 1c fruit
  2. 1/4c – 1/2c finely chopped nuts
  3. 1/2c – 1c fresh vegetables
  4. (When using fresh fruit, use honey or syrup as the base. When using canned fruit, use juice from the can as the base.)

  1. • Butter, garlic, onion, Granny Smith apple
  2. • Olive oil, salt, pepper, garlic, rosemary, lavender, sage
  3. • Vermouth, pepper, garlic, shallot
  4. • Olive oil, sundried tomatoes, basil
  5. • Brandy, garlic, tarragon, slivered almonds, sliced mushrooms
  6. • Pesto (olive oil, basil, garlic, parmesan), pine nuts
  7. • Mango chutney, curry powder, cashews
  8. • Apple cider vinegar, salt, pepper, garlic, thyme, mustard powder, crushed red pepper
  9. • Pesto, artichoke hearts, sundried tomatoes
  10. • Caramelized onions

  1. • Raspberry jam, walnuts
  2. • Honey, dried cranberries, walnuts
  3. • Maple syrup, walnuts
  4. • Any jam (by itself)
  5. • Butter, oats, brown sugar, cinnamon, pecans, apples
  6. • Pumpkin butter, cinnamon, pecans, dried cranberries
  7. • Kahlua liqueur, brown sugar, pecans
  8. • Honey, lavender blossoms, almonds
  9. • Balsamic vinegar, cherry preserves
